Sea bass en papillote on a bed of potatoes 

Serves 4


  • 1 whole 2 lbs sea bass
  • 1 onion, sliced into very fine rings
  • 1 orange 
  • parsley
  • 3 potatoes
  • 1/2 cup of white wine 
  • orange peel, sliced finely into strips
  • the juice of 1/2 orange 
  • extra virgin olive oil 
  • salt and pepper

Place a large rectangle of baking paper on the work surface. Finely slice the potatoes (a potato peeler can be used). Arrange the potato slices into a shape that follows the fish’s outline. Season with salt and pepper. Place the fish on top of the potatoes. Sprinkle the orange peel and onion on top and add the orange juice, wine, and olive olive oil. Close up the paper over the fish and seal tightly. Bake in a preheated oven at 390°F for about half an hour.
