Apple Cake

Serves 4

  • just over 1 1/2 cups of flour
  • 1/2 cup of sugar
  • 1/3 cup of butter
  • 2 eggs
  • 2 lbs Golden apples
  • juice and grated rind of 1 lemon
  • 1 cup of milk
  • 1 shot glass of rum

Preheat the oven to 300°F. Peel the apples and slice them thinly. Place in a dish, sprinkle in 2 tablespoons of sugar, and add the lemon juice and rum. Let the apples marinate for about an hour.

Beat the egg yolks with the butter, sugar, milk, lemon rind, and flour until a smooth batter is obtained.

Beat the egg whites to stiff peaks and gently fold into the batter.

Grease a cake pan with butter and pour in the batter. Place the apple slices on top. Bake for approximately 35 minutes.
